Chilled Mulberry & Coconut Bite

I had a function for a yoga DVD launch, not so long ago and I was asked to cater for the event. I usually don’t do this as part of my services, but I had wanted to see how creative I could be with the given budget. I am happy to say that this little treat went down a treat. Small enough to consume in a bite or two, depending on how ladylike you would like to appear and it was loved by the kids who attended too, which is always a bonus in my eyes.
You can use cashews or macadamia nuts for the base, depending on how much of the coconut you would like to come through. I went with macadamias and cashews and added white mulberry powder to give it that little more something. I find that mulberry is one of my weaknesses at the moment. The powder is such a great addition to my growing list of alternative sweeteners. The dried mulberries are also a great snack, a handful at a time and have proven a great diversion at keeping my little one busy and content.
Snack-a-licious facts
Mulberries have the highest antioxidant levels found of any berry, it also aids digestion and is good for the liver, helping flush out alcohol from the liver quickly. Mulberry tea is believed to help stop your hair from going white and cooled tea can be used as a brightening toner as mulberry regulates melanin synthesis reducing dark spots and blemishes.
Chilled Mulberry & Coconut Bite
3/4 Cups Cashews ( soaked)
3/4 Cups Macademia nuts
1/4 cup dried muberries (powdered)
1/2 Cup Shredded coconut
1/2 teaspoon sea salt
1 tablespoons maple syrup
1 tablespoon coconut oil, melted
In a Food processor combine nuts, shredded coconut and salt until crumbly.
Add syrup, coconut oil , blend until sticky when pressed together.
Coconut Vanilla Creme
1 1/2 cup coconut meat
1 1/2 cup cashews (soaked for 4-6 hours)
1/2 cup agave syrup
seededs of 1-2 vanilla beans or 1 tablespoon vanilla extract
1 cup coconut oil
Pinch sea salt (optional)
Squeeze lemon juice (optional)
Blend all ingredients in a high-speed blender until smooth
Add coconut oil and blend until well combined
Place in the fridge to set whilst building your mini bites.
I used a mini morsel set to make the pies.
Put something in the morsel set before esembling your pie, so it is easy to lift when done.
Top with coconut vanilla creme.
Let set in the fridge for atleast 30 minutes before serving.
